Tandoori dishes are the result of a combination of the style of Tandoori food and the oven in which it is cooked. Tandoori dishes are marinated in yoghurt with selected herbs and spices and then cooked in a tandoor. The tandoor itself is a barrel shaped, open topped clay oven which is kept at a very hot temperature with burning charcoal.
The process of cooking in this way seals in the goodness and imparts a unique and special flavour to the food. Served with green salad and a slice of lemon.
